Sale price HK$300.00

<Santa Teresa>
This farm and wet mill are located in the mountains east of Santa María, called Santa Teresa. High altitude, young soils, cool temperatures, gentle sunlight, and a unique microclimate contribute to the unparalleled quality of Santa Teresa 2000.

Roger Urena and his son, José Alex, were among the first in the region to develop an interest in rare and exotic varieties like Geisha. They meticulously sourced seeds and seedlings from high-quality sources. Now, these seedlings have matured, and combined with the local climate, they produce coffee that is considered among the finest in the country, and perhaps even the world. This year, the farm won first place in the "Washed" category at the Cup of Excellence coffee competition.

<Red Honey>
Roger and José Alex have dedicated their The Geisha variety undergoes a rare processing technique. It adds body, deepens the coffee's complexity, and enhances its sweetness. Fresh, carefully picked coffee beans are fed into a wet mill, where they are quickly pulped and partially deveined. The parchment sheets are placed on the greenhouse's concrete terrace for three days, being moved regularly. This initiates the drying process and encourages mild fermentation. Afterward, under constant supervision, the parchment sheets are moved to raised drying beds within the greenhouse. The coffee is then dried for 15 days, carefully moved daily. As one of the highest wet mills in the country and perhaps the world, the lower temperatures, varying sunlight angles, and thinner air result in significant variations in coffee quality.
