SOT Coffee Roaster COLOMBIA El Paraiso Anaerobic Lychee
The highly popular Lychee Lot has arrived in 2025! Post-harvest processing takes place at the El Paraiso farm, located at an altitude of 1,930 meters. This coffee boasts the elegant acidity and sweetness of peach, along with aromatic floral notes reminiscent of lychee tea, leaving a refreshing and long-lasting finish.
A clever and innovative approach was incorporated into the anaerobic fermentation and drying methods, resulting in distinct flavor profiles. Coffee cherries undergo anaerobic fermentation at 19°C for 36 hours, followed by a second anaerobic fermentation at 19°C for 40 hours after pulp removal. During the washing process, the cherries are first washed with 40°C hot water, then with 12°C cold water. The drying process takes place at 35°C and 25% humidity for 34 hours, achieving a final moisture content of 11%.
This series of meticulous processes allows each coffee bean to exhibit a unique flavor profile.
