The lot "APRIL" sold this time adopts the culture fermentation method, adding fruits during the fermentation process. We use yeast to mix coffee and fruits for fermentation and produce a metabolic process. Finally, it presents a unique flavor with a rich aroma of peach and yellow fruits.
Finca Cambac is located near Manizales, in the Caldas Department, Colombia, in the central Andes Mountains, in the so-called “Colombian Coffee Triangle,” an ideal coffee-growing region with its high-altitude climate and topography, and volcanic soils.
The farm is one of 17 plots in the El Jardin farm, owned and operated by the Restrepo family. Founder Hermel Restrepo has been involved in coffee cultivation for over 40 years, and his son and co-owner Juan, the designer of Finca Cambac’s fermentation program, has always challenged himself to innovate and create unique processing methods. The farm is also equipped with advanced facilities, including a dedicated fermentation laboratory, which lays the foundation for his creative ideas.
This Pink Bourbon April series uses a process called "cultured fermentation". Fermentation combines fruit and yeast, using the metabolism of microorganisms to create a unique flavor. Its taste is characterized by peach and yellow fruit flavors, resulting in a cup of fresh and impressive coffee.
