SOT Coffee Roaster COLOMBIA Huila Las Flores Bourbon Sidra Anaerobic Washed
This special batch of coffee beans comes from Juan Vergara's Las Flores farm in Huila, Colombia. Juan is known for his innovative fermentation and drying techniques and is one of the leaders in the field of specialty coffee. The farm was founded in 1990 and has been transformed into a specialty coffee production base since 2006. It is currently known for growing rare varieties such as Sidra, Ushu Ushu and Pink Bourbon.
This batch of Bourbon Sidra anaerobic washed coffee beans undergoes a carefully designed two-stage fermentation process. First, the coffee beans undergo a 24-hour dry fermentation to stimulate the metabolic activity of yeast and bacteria. Then, the coffee beans are transferred to GrainPro packaging bags and stored at low temperatures, allowing lactic acid bacteria to slowly break down sugars and ferment, thereby increasing the lactic acid concentration.
After being pitted and carefully washed, the coffee beans are dried on African drying beds to obtain a clean and lively flavor. Sidra's unique smooth taste and charming aroma similar to lemon myrtle impress. The taste perfectly blends juicy peach, sour plum and bright star fruit aroma, with a long and elegant aftertaste.
