Coffee fermentation is a natural biochemical process. Coffee cherries are rich in sugar and water, which are the cornerstones of fermentation. Fermentation can be carried out in an aerobic or anaerobic environment, and the organic components are broken down during the fermentation process, forming a unique flavor.
This process makes the coffee taste fuller, highlighting its complex and rich aroma, and finally presenting a wine-like flavor, soft acidity and delicate sweetness.
