Limoux is a coffee-growing region located in northern Sidamo, Ethiopia. Compared to Sidamo coffee, Limoux coffee has a smoother taste, delicate acidity, bright citrus aromas, and a stronger floral flavor and subtle acidity similar to wine.

Coffee fermentation is a natural biochemical process. Coffee cherries are rich in sugar and water, which are the cornerstones of fermentation. Fermentation can be carried out in an aerobic or anaerobic environment, and the organic components are broken down during the fermentation process, forming a unique flavor.

This process makes the coffee taste fuller, highlighting its complex and rich aroma, and finally presenting a wine-like flavor, soft acidity and delicate sweetness. Especially light roasting can highlight the delicate flavors of strawberry, plum and cocoa nibs, allowing you to fully enjoy the sweetness and rich aroma of the fruit.

All the coffee beans we sell and blend have a SCAA rating of 80 or above, which is the same quality level of specialty coffee beans, accounting for only 5% of the total coffee beans produced and distributed globally.

It involves quality control of farm areas, producers, countries of origin, growing methods, harvesting, production processing, distribution routes, sorting and all parties involved in creating a specialty coffee supply chain.

We source the highest quality, carefully selected coffee beans and roast them in small batches in-store in a Nordic style to extract the fresh, authentic and fruity aroma of the beans and maximize sweetness.
