This batch of coffee beans was processed using a special method called anaerobic natural drying, which is only available to a select few producers. By isolating the beans from oxygen in a sealed environment and carefully controlling the fermentation process, the natural characteristics of the coffee beans are fully developed, resulting in a bright, delicate acidity and rich aroma.
The drying process is meticulous and slow, with strict control of temperature and humidity. The result is refreshing citrus and lemon flavors, along with soft floral notes reminiscent of white flowers. Beyond its clarity, the wine offers the elegance and complexity that is unique to Yirgacheffe.

After roasting, the coffee beans need to be aged for 14 to 21 days before you can taste their true flavor.
