THE COFFEESHOP's signature top-tier batch, "Typica Orlando," has arrived! Farm owner Orlando Calvajal spent two years working in the US to raise funds to realize his dream of becoming a coffee producer. After returning home, he and his wife established their farm. Over time, he shifted his focus from quantity to quality, and in 2018, he was awarded 2nd place in the "Cup of Excellence."

His Ross Pinos farm is renowned for its meticulous management, ensuring the purity of its beans through details such as soil sterilization, pH adjustment, fertilization, shading control, and daily pulp removal. The "Typica" variety used is considered the closest to the native Arabica variety, possessing a jasmine-like aroma and silky texture. Although it has low yields, weak disease resistance, and is difficult to cultivate, its exquisite flavor is highly prized, accounting for only about 0.01% of the global market.

Ross Pinos' Typica is renowned for its exceptional purity and superior cup quality, consistently ranking among the top three in the Honduran COE. In 2021, it achieved 3rd place with a score of 90.37. This new batch exhibits a characteristically silky texture, exuding fermented and floral aromas reminiscent of rosé, with fruity notes of Merlot lemon, green apple, and pineapple, and a sweetness as delicate as white sugar. This is a top-tier Honduran coffee that combines elegance, balance, and complexity.

About THE COFFEESHOP

Although THE COFFEESHOP is located behind the quiet Komaba campus of the University of Tokyo, it still attracts a large number of coffee lovers to come and make a pilgrimage, which shows its appeal. Walking into the store, the open space houses a large American-made coffee roasting machine, allowing you to clearly see the coffee craftsmen roasting beans and hand brewing operations, adding to its charm.
Since opening in 2011, THE COFFEESHOP has only focused on roasting and brewing techniques. The store manager, Daichi Hagiwara, was attracted by the pursuit of delicious coffee and joined in 2016. He quickly won the roasting master team challenge championship in 2018. Here, each coffee bean is carefully selected and repeatedly cupped, allowing you to easily taste the layers and ultimate flavor of coffee!
