The coffee is part of the "Bourbon Project" led by local Colombian exporter Azahar Exporting, which aims to rediscover and evaluate the charm of rare and ancient varieties in a market that currently favors certain varieties and production methods such as Geisha.

Pink Bourbon is already in very low volumes and therefore not cost effective to produce, however, by improving quality and paying extra compensation, we have created a system that encourages producers to continue producing these rare varieties.

The coffee was carefully selected from pink bourbon varieties collected in the warehouses of Manos al Grano, a non-profit organization founded in Colombia to support producers and workers.

townsfolk coffee is located in the center of Kanazawa, right in front of a lush park. Large windows offer views of the city and changing seasons.

The owner accumulated work experience in specialty coffee shops in Tokyo and Copenhagen, Denmark, and opened this store in July 2020. They only produce high-quality coffee with unique flavors, and they strive to blend the best of Japan and Denmark to deliver delicious coffee.
