GLITCH COLOMBIA Huila El Mirador - Strawberry Natural
The El Mirador farm, which has been around for more than 80 years, has produced an innovative batch of new beans.
El Mirador is located in Palestine, the village of Portal in the municipality of Huila , has long been an important player in the coffee industry. They specialize in fermentation technology, using multiple methods tailored to each batch to improve cupping consistency and quality.
Only high Brix cherries are selected for this batch to improve cupping quality and consistency. These selected cherries undergo an initial fermentation of 60 hours in plastic tanks, then molasses and a lactobacilli mother culture are added, and then further fortified with a strawberry culture for a further 270 hours, for a total of 330 hours of fermentation before drying.
This extended fermentation process gives the coffee beans a sweet, fruity flavor reminiscent of strawberry pears and apricots.
