[About the brewery]
The sake brewer is Tarakawa Co., Ltd., located on Miyako Island in Okinawa Prefecture.
The region is rich in natural resources, consisting of coral reefs, and has a history of over 70 years of production in Awamori.
Making full use of the rich bounty of Miyako Island, we continue to develop our passion for aged wine.

[Alcohol used]
Made with Miyako Island rum called "MAKUGAN." The name comes from the dialect name for the coconut crab. It also conveys the message that these creatures are familiar to Miyako Island, and we should cherish nature.
Dishes centered around the water, yeast, sugarcane, and sake artisans of Miyako Island.
The hard water, rich in minerals unique to Miyako Island and formed by the rise of coral reefs, forms the core of this pure sake. The native Miyako Island yeast strain "MY17" contains abundant sweet components, resulting in a rich and pleasant aroma and flavor. The sugarcane molasses is always fresh, as it is within direct reach of the brewery.
By utilizing these ingredients, we create a less-than-clean flavor.

[The taste of sake and coffee]
It exudes the elegant aroma unique to rum.
Brazilian coffee has a very prominent nutty aroma.
Using ingredients from Miyako Island, the unique caramel-like sweetness of MAKUGAN is blended together to create a complex and profound flavor.
In the aftertaste, you can clearly feel the unique flavor of MAKUGAN, and it is consciously not too clean.

[About the brewery]
The brewer is Kumazawa Sake Brewing Co., Ltd., founded in 1896. With the motto "Good sake makes Japan," it plays the role of a local cultural center as the only remaining brewery in Shonan.
Our business is not limited to sake brewing, which we have been engaged in since our founding. We are committed to various activities that stimulate "places and people," such as beer and spirit production, restaurant and bakery development and management, event collaborations, and sake rice projects.

[Alcohol used]
"Daytime Dog" is a standard gin made using Kumazawa Brewery's craft gin. The name comes from the characteristics of the land that preserves many legends about tengu (a mythical creature in Chinese mythology).
The product was released in 2021. This is the first distilled spirit produced by the Kumazawa Sake Brewery in 100 years.
It is worth noting the brewery's unique brewing method. First, they use "kasutori shochu" (rice wine made by re-fermenting ginjo lees) to brew rice wine. As a spice, only juniper berries, which have a woody bitterness and sweetness, are pickled and distilled in three steps.

The herbal ingredient is "Daytime Dog," and although it's simply made with juniper berries, the special production method gives it a rich flavor. Some say you can taste the subtle sweetness of Kasutori shochu.
