Days Coffee Roaster COLOMBIA EL DIVISO CHIROSO

Sale price HK$280.00

Chiroso is a rare varietal recently rediscovered in Colombia, originally found in the Antioquia department. It is renowned for its exceptionally clean, delicate, and layered floral and fruity notes, often compared to Geisha in terms of flavor profile.

Fully ripe coffee cherries undergo 16 hours of oxidation, followed by 38 hours of anaerobic fermentation in sealed tanks. After pulping, the beans are fermented with their mucilage. They are first washed with hot water at 65-70°C, then quickly rinsed with cold water at 15-16°C. This temperature difference effectively locks in aromas and significantly enhances the coffee's sweetness and clarity.

Top Notes: Lime juice, sweet orange, yuzu
Mid-to-Late Notes: Jasmine, honey, rosemary
Characteristics: The flavor is a balanced sweet and sour, like yuzu marmalade, with a subtle spicy hint of yuzu kosho and a lingering lemon candy aftertaste.

The roaster recommends this bean for both hot and cold brewing. Cold brewing, in particular, further accentuates its refreshing, fruit-juice-like quality and layered floral notes.
