This is an innovative geisha coffee made using native yeast from the estate during fermentation.
After the coffee cherries have been peeled, they are placed together with the starter culture medium into a bioreactor for fermentation.
Afterwards, it is washed with water, dried in the sun until the moisture content is about 40%, and then transferred to a completely dark drying room equipped with a dehumidifier to continue drying until the moisture content is about 11%.
Not only are bioreactors used during the fermentation stage, but clever ideas and controls are also incorporated into the drying process, and the entire flavor shaping process is meticulously managed.
This is a special coffee created by a team with extensive knowledge and advanced equipment, and it has a very distinctive style.
In terms of flavor, it is characterized by the flavors of purple fruits such as grapes and blueberries, while fully retaining the floral fragrance and clean, clear impression unique to geisha varieties.
Although it is a special processing method, it brings out a very clean and elegant flavor.
