El Paraiso estate has always focused on anaerobic fermentation, consistently developing highly innovative coffees through creative thinking. This particular lot, to unleash ultimate fruitiness, specifically uses whole-fruit anaerobic fermentation with the pulp, allowing the rich fruit aroma and complex flavors from the pulp to perfectly permeate the green beans.

After depulping, the coffee beans undergo a second fermentation stage lasting 48 hours. Subsequently, the estate uses a "Thermal Shock Washed" process, alternating between hot and cold water for cleaning. This crucial step is like the final "setting" for the coffee beans, not only cleanly stopping fermentation but also locking in the aroma components of the green beans, firmly preserving delicate flavors.

Through this precise processing method, the rich character of Geisha is elevated to a higher level. The brewed coffee emits a magnificent and sweet flavor, reminiscent of Peach Tea and Nectarine.
