Buenos Aires Farm, located in the village of Palmar de Criollo in the Huila region of Colombia, brings the rare variety Sudan Rume.
Located at an altitude of approximately 1,750–1,800 meters, Buenos Aires Farm, led by Mr. Johanny González, focuses on quality improvement and sustainable farming methods, and collaborates with local producer groups to bring the potential of the Huila region to the world stage.

Sudan Rume is believed to have originated in southern Sudan and is a natural mutation of the Bourbon variety.
Known for its delicate flavor, complex aroma, and smooth, full-bodied taste, it has been favored by baristas and enthusiasts worldwide for many years.
However, due to its low yield and extreme dependence on suitable cultivation environment to maintain high quality, it has always been regarded as an extremely rare and precious variety.

This batch was harvested when the coffee cherry sugar content reached 24–26°Brix, and then pre-fermented for about 48 hours using circulating Mosto (fermentation liquid).
Then, a thermal shock treatment is performed with warm water at about 50°C to open up the cell tissue, allowing for more precise control of the fermentation process.
Then, about 80 hours of anaerobic fermentation is carried out to gradually shape the unique and complex aroma structure of Sudan Rume.

The flavor profile is characterized by a sweet and sour taste similar to blueberries and raspberries, along with a rich fruity aroma, and an elegant floral fragrance reminiscent of roses.
It is a special creation with a distinctive presence and elegant delicacy, well worth savoring.
