KURASU KYOTO EL SALVADOR Don Jaime Pacas Natural
This is the third year that Jaime Guevara has been working with Kurasu.
Personally, the first batch of coffee beans roasted by Kurasu were Jaime's Natural, so every time I receive a coffee from him, I feel like I've reached a milestone.
Until last year, I thought Jaime was characterized by plum flavors and violet floral notes, but this year I think it also has a strong sweetness.
It is not bland, but has a strong, mellow, and lasting sweetness. There are a lot of onomatopeia so it might be hard to follow, but that’s how I imagine it.
As I watched these changes, I realized how fascinating coffee is as a crop. This is one of the benefits of always buying from the same producer.
Regarding roasting, last year we roasted our coffee to medium-light, but this year we are sticking with a light roast. As the roasting process continues, sweet flavors such as chocolate and caramel become more pronounced, but this sweetness comes from the roasting process, not the green beans.
Of course, depending on the characteristics of the green coffee, adding such sweetness might help improve the balance in the cup, but given our desire to maximize the benefits of Pacas Natural, we didn’t feel it was necessary.
