Our brand name "LEAVES" reflects our desire to continually grow while trying new things, much like a leaf that, having fulfilled its role, falls from the branch and nourishes new leaves.
Yasuo Ishii, representative and roaster of LEAVES COFFEE ROASTERS, is a former professional boxer born in Fukagawa, Koto Ward, Tokyo. He has been involved in the restaurant industry since his youth, gaining 20 years of experience in restaurant management, instruction, and consulting. In 2010, a cup of coffee given to him by an acquaintance opened up a new world. He opened LEAVES COFFEE APARTMENT in 2016. In January 2019, he opened a roasting facility called ROASTERS. Currently, three machines are used for production roasting: a Probat UG-15, a Giesen W6A, and a Stronghold S7X. He taught himself to be a barista and roaster, establishing his unique style. In 2021 and 2022, he was recognized as a notable roaster by the American coffee media "Sprudge" for two consecutive years, a first in Japan.
To balance roasting and store operations, the roastery is open three days a week: Saturday, Sunday, and Monday. By maximizing the potential of the ingredients, we aim to create a clean "beverage" with a delightful balance of acidity and sweetness.
Our goal is to bring extraordinary experiences into everyday life through coffee, enriching the global environment and people's health.
