THE COFFEESHOP EL SALVADOR / Ovidio Flores
Mr. Ovidio Flores was born in the La Montanita community of the Chalat Nango province of El Salvador. He worked in agriculture with his father from the age of 15, but this path was interrupted by the Salvadoran Civil War. Throughout his life, he also experienced several irregular migrations to the United States.
In 1992, Mr. Ovidio established his first coffee farm. Later, he owned two more farms, but sold them both and repurchased them in search of higher-altitude, higher-quality land. This land is now the El Trompillo farm.
The farm is located in El Mojin, Chalatenango province, at an altitude of approximately 1,400 to 1,550 meters. This land, inherited from his father, was originally used to grow Pacas coffee.
For the first five years, he started by learning to remove the pulp from the fruit by hand, and as he accumulated knowledge and experience, he continuously improved his farming methods. Later, he purchased new land at an altitude of 1,650 meters and planted a variety of varieties such as Pacamara, Pacas, Typica, and Geisha.
In terms of processing methods, the farm uses traditional washed, sun-dried, and honey-processing methods. There are many coffee-loving friends nearby, and everyone regularly shares knowledge and techniques with each other.
Mr. Obidio is a family man with four children. He is devout, values religious beliefs, and lives a simple life with a deep love for nature and animals.
The farm's name, "Trompillo," comes from the common name of a native tree in the local Alotepeque–Metapán Range coffee-growing region.
