Compared to Gersi, known for its rounded sweetness and gentle acidity, Banko Chelchele is a brighter and more vibrant coffee. It displays typical Ethiopian sun-dried bean berry aromas, along with a crisp, refreshing apple acidity, and sometimes a lemony citrus note at different temperatures. The texture is light and smooth, becoming slightly viscous as the temperature drops, revealing a layer of flavor reminiscent of hard white peach.

The name "Chelchele" represents both the batch and the village, meaning "shining" in the local language. True to its name, this coffee boasts a bright acidity and vibrant fruitiness, showcasing the lively character of high-quality sun-dried beans.

Both Gersi and Banko Chelchele, from the Yirgacheffe region, belong to the berry and floral aroma family, but their acidity and texture are quite different, reflecting subtle regional differences and variations in fermentation and processing methods. When tasted at the same roast level, the contrast between the two is clearly noticeable; changing the roast level reveals even more layers of flavor. This is a precious comparative experience worth savoring.

About THE COFFEESHOP

Although THE COFFEESHOP is located behind the quiet Komaba campus of the University of Tokyo, it still attracts a large number of coffee lovers to come and make a pilgrimage, which shows its appeal. Walking into the store, the open space houses a large American-made coffee roasting machine, allowing you to clearly see the coffee craftsmen roasting beans and hand brewing operations, adding to its charm.
Since opening in 2011, THE COFFEESHOP has only focused on roasting and brewing techniques. The store manager, Daichi Hagiwara, was attracted by the pursuit of delicious coffee and joined in 2016. He quickly won the roasting master team challenge championship in 2018. Here, each coffee bean is carefully selected and repeatedly cupped, allowing you to easily taste the layers and ultimate flavor of coffee!
