The fruity aroma fills the air! Japanese citrus, Pacas Washed!
Victor Paz, the deliveryman for this coffee, inherited the farm from his father when he was 18 years old.
At 34, he abandoned the farm due to low prices and pest and disease problems caused by the farm’s low altitude.
However, in 2011, he discovered a plot of land atop the Santa Barbara Mountains. Believing it had the potential to produce high-quality coffee, he began cultivating coffee again.

The region’s harsh climatic conditions make cultivation extremely difficult, but since 2015, following the advice of his longtime friend Arturo Paz, Victor has been growing and selling high-quality coffee.
He recently planted a new plot of SL28 and last year started growing Geisha coffee.

Last year, his coffee was also sold at THE COFFEESHOP.
Back then, the coffee was processed with the same Pacas honey process, but this year the coffee we have in stock is a simpler washed process.
This coffee has a hint of Japanese citrus, reminiscent of citrus notes like sudachi, yuzu, and kabosu.
This Japanese citrus flavor also appears in Juan Carlos Juarez Geisha, another Honduran Geisha coffee we recently stocked at THE COFFEESHOP. Victor Paz and Juan Carlos are both grown in nearby Santa Barbara, so this may be a feature of Santa Barbara coffee this year.

As the temperature drops, the unique tropical flavors of the Pacas variety gradually emerge, allowing you to experience the evolving flavors in the coffee as you taste it.
Since the roast is relatively light, we recommend aging it for a longer time. We hope you enjoy it!

About THE COFFEESHOP

Although THE COFFEESHOP is located behind the quiet Komaba campus of the University of Tokyo, it still attracts a large number of coffee lovers to come and make a pilgrimage, which shows its appeal. Walking into the store, the open space houses a large American-made coffee roasting machine, allowing you to clearly see the coffee craftsmen roasting beans and hand brewing operations, adding to its charm.
Since opening in 2011, THE COFFEESHOP has only focused on roasting and brewing techniques. The store manager, Daichi Hagiwara, was attracted by the pursuit of delicious coffee and joined in 2016. He quickly won the roasting master team challenge championship in 2018. Here, each coffee bean is carefully selected and repeatedly cupped, allowing you to easily taste the layers and ultimate flavor of coffee!
