THE COFFEESHOP PERU/Carnaval
Carnival, a brilliant and colorful feast created by four coffee producers!
Cajamarca, located in northern Peru, is famous for producing high-quality specialty coffee with its superior altitude of 2,000 meters and fertile soil. The "Carnaval" series we launched this time is a special series made from coffee beans collected by four coffee producers who grow coffee in the Cajamarca region.
The name "Carnival" of the series comes from the famous festival in the Cajamarca region, "Carnaval Cajamarquino". This festival is held for several days every February. People wear colorful costumes and line up in formations called "patrujas" to sing and dance. When exporter Cultivar cupped the series of coffees in the laboratory, people cheered for its bright and complex flavors, so the series was named "Carnival-style!".
I think the rich flavor comes from the 48-hour aerobic fermentation, the blended batches from four coffee factories, and the combination of multiple varieties. Just like the Peruvian specialty coffees that THE COFFEESHOP has handled in the past, it often uses a blend of multiple varieties, which gives it a complex flavor, which is also one of its characteristics. When it comes to specialty coffee, single-farm, single-variety batches are already common, but I really like the rich flavors produced by blending.
At high temperatures, you can feel the fruity aromas of green apples and oranges. At this point, the acidity is complex and beautiful, but as the temperature drops, the floral aromas gradually emerge, and you can also smell subtle aromas such as honey, brown sugar and black sugar. With one sip, even if the temperature changes, this dazzling change of flavor is like a carnival parade in colorful costumes. This is a coffee that is definitely worth brewing hot and savoring slowly.
